Recipe Instructions

  • Serves: 3-4 | Total Cooking Time: 60 mins

Step 1

  1. Mix yeast with warm water. Wait for around 5 minutes for yeast to be active.

Step 2

2. In a different bowl, mix flour and salt first. Add yeast mixture into the bowl. Mix thoroughly and knead for 2-3 minutes. Cover with plastic and let sit at room temperature for 1 hour (12-24 hours at the best, longer the better).

Step 3

3. Punch the dough to let the gas out. Fold the dough from all sides once. Cover with plastic and let sit for another 1 hour.

Step 4

4. In the meanwhile, prep the sauce and the toppings. For the sauce, drizzle some olive oil into a pan. Sauté sliced garlic and pour the pureed tomatoes. Simmer for around 10-15 minutes on low heat. Add fresh oregano and salt to taste.

Step 5

5. For the kimchi toppings, add olive oil, bacon, and kimchi to a pan. Sauté until bacon is cooked.

Step 6

6. Spread the dough onto a pizza pan. Add the sauce, kimchi, bell pepper, red onion, and shiitake mushroom. Sprinkle generous amount of mozzarella cheese on top.

Step 7

7. Bake for about 15 minutes at 260C.

Step 8

8. Garnish with rocket or more fresh oregano. Enjoy right away!
